Place the sliced tomatoes, cucumber and red onion, avocado and coriander in a large bowl.

Pour over all ingredients 2 tablespoons oil, and 2 tablespoons of  lemon juice. Mix it gently. Mix with ¾ teaspoon salt and 1/8 teaspoon pepper  before serving. Enjoy!!!

  • 1 pound tomatoes
  • 2 cucumber
  • ½ red onion (chopped)
  • 2 avocado (cubed)
  • 2 tablespoons olive oil or sunflower oil
  • 2 tbsp. l lemon juice
  • Coriander ¼ cup (cutting)
  • ¾ teaspoon salt
  • ⅛ teaspoon black pepper
Instructions
